Last Minute Dressing

Yummy! For dinner tonight, I made Spaghetti with Meat Sauce. It was soooo.....yummy! Since it was lacking in the veggie department and I had some salad to use, I thought a salad would round out the meal. Well, to my surprise, I had ran out of salad dressing. (Actually, I just ran out of dressing my kids would eat.)

My husband was running late and was having a pretty bad trip home, so I decided not to ask him to pick up some dressing. I finally decided to make my own French Dressing. I came across a fabulous recipe on my favourite recipe site: http://allrecipes.com

I did make some changes, only because it was what I had on hand. (A warning: This recipe makes a lot of dressing, so I only made half the portion.) For 13 portions, the recipe called for 1/4 cup + 2 tbsp sugar. This sounded like WAY too much sugar for me. So, I only used 3 tbsp of sugar, and thought it was still pretty sweet. I didn't have any fresh onions, so I substituted 2 tbsp dried onions. I didn't have any lemons either, so I substituted lime juice instead. Also, used the juice of the whole lime. I didn't want to waste the lime, and wanted to balance out the sweetness.

Overall, I thought the recipe was really easy and pretty awesome! I would normally have all the ingredients on hand, and my kids enjoyed it. Definitely a winner in my household!
